While others may be wondering why it is that Shalimar won this award even though there are many other excellent Indian restaurants in the region, chef Salik Miah Subhan, who founded the family-owned restaurant in 1982, has zero doubt as to why. Shalimar, he says, is one of the only Indian restaurants in all of Southern California to use a true wood-burning charcoal-fired tandoori, as opposed to a gas-heated one. It makes all the difference, he says, lending distinctly flavorful authenticity to everything baked in it, from the restaurant’s celebrated Chicken Tikka Masala, to garlic naan bread with a flavor and texture many say is unique to Shalimar.
